Here's a recipe for "Special K Loaf," that wonderful Adventist substitute for meatloaf:
There are several recipes for Special K Loaf floating around the internet. This version has been traditionally served at the first-Sabbath-of-the-month potlucks at my church, and it is very popular, and very delicious. There are two parts, the loaf itself, and a red glaze that is spread on the top. Even if you haven't darkened the doorway of an Adventist church in decades, this is "comfort food."
Special K Loaf:
Ingredients:
- 1/2 cup butter or margerine
- 1 cup chopped onions
- 1 cup chopped pecans or walnuts
- 3 teaspoons McKay's chicken seasoning (or suitable substitute)
- 1 package George Washington broth (or suitable subsitute)
- 5 eggs (extra Large)
- 1/2 cup milk
- 1 quart cottage cheese
- 4 cups Special K cereal
- 1 13 ounce can of soymeat chicken style or FriChick
Directions:
Saute onions, nuts, seasoning, and broth powder in butter. In large bowl, beat eggs and milk together and combine with diced soymeat and the remaining ingredients. Bake the mixture in a greased large flat pan at 350 degrees for 60 to 90 minutes (usually closer to 90). Spread with the red sauce prior to the last 1/2 hour of baking.
Red Sauce
Ingredients:
- 2 Tablespoons butter
- 1/4 cup chopped onions
- 1/2 cup brown sugar
- 1 cup ketchup
- 2 teaspoons chili powder
- 1 teaspoon salt
- 2 generous shakes of "liquid smoke" (or comparable product)
Directions:
Saute butter and chopped onions. Separately simmer remaining incredients for five minutes. Combine both parts, mix, and spread over the Special K Loaf prior to the last 1/2 hour of baking time.
I actually prepared this for Christmas dinner. It was a big hit, and everyone appreciated it. The seasonings are not readily available, so I substituted one cube of chicken broth and one package of McCormick's meatloaf seasoning. If I had it to do over, I'd cut about half of the brown sugar out of the glaze recipe; ketchup already has a substantial dose of sugar. I also see that the recipe calls for 2 teaspoons of chili powder, and I only put in one.
